Peruvian purple corn was a crop prized by the Incas and other ancient peoples. It’s a rich source of C3G, one of the most potent natural antioxidants, in-fact purple corn has a higher antioxidant capacity than blueberries!
It also contains substantial amounts of phenolics and anthocyanins. Anthocyanins are a type of complex flavonoid that produce the purple colours of the corn. Phenolics are known to have many bioactive and functional properties.
